Fiesta Friday Frabulous Festmuffins…

IMG_2219Oh frabjous day – I am joining Angie’s fiesta friday over at the Novice Gardener.  I am bringing Banana Blueberry, Almond and Date Muffins to Fiesta Friday and instead of a song, a poem (written by someone else in 1872):  Jabberwocky it’s fun, it’s  whimsical, and I suspect Louis Carroll wrote it one Friday during the cocktail hour while imbibing his first gin and tonic in anticipation of a long weekend in Spring. I have copied in the first verse, you can find the whole poem by clicking the link or any of the other two links hidden in this post! You can then read the poem to your significant other, or yourself, this evening while enjoying a glass of your favourite beverage, and who knows what fun will follow?

Jabberwocky

Twas brillig, and the slithy toves,

Did gyre and gimble in the wabe:

All mimsy were the borogroves,

And the mome raths outgrabe

And you can make the muffins for Sunday breakfast post Valentines day in bed :).

Now there is nothing slithy above these muffins, they do not gimble nor do they gyre – but if you make them I suspect they will mimsy into your tummy very fast – and you too the mome raths will outgrabe. These are a breakfast muffin, they will go well with a coffee and the paper midmorning, they are not very sweet.

Banana Date and Blueberry muffins

300g (2 cups flour), 2 teaspoons baking powder, 2 teaspoons ground cardamom spice ( I am going through a Swedish phase, you can use mixed spice or whatever you have), 100g  (1/2 cup) dark muscovado sugar,  1 cup mashed bananas (= about 2 medium bananas), 160g mixed chopped dates and blueberries (I suspect chocolate chips would go well too, but then I’d not use any spice, other than maybe a pinch of nutmeg) 3 eggs lightly beaten, 80ml (1/3 cup) almond puree (this is expensive, you can also use nut oil or vegetable oil if you must), 1/3 cup (80ml buttermilk). Put muffin papers into a 12 hole muffin pan. Mix the dry ingredients, stir in the the wet ingredients, spoon into pan, bake at around 200°C (moderately hot) for about 20 minutes.

Serve with a coffee for breakfast!

      I have a cookbook collection that keeps growing, and I will carry the books around the house a couple at a time and then focus on a cuisine or ingredient for a while – like cardamom. To be honest though I could travel from Szechuanese eggplants for dinner (following Fuchsia Dunlops great books, if you are ever in London and want to try some great spicy food try http://bashanlondon.com/ ) to american breakfast pancakes the following day, while flirting with Jemenite Lechuach in between. So my fixations may move fast! Congratulations on working on your PhD – hard work indeed, takes a long long time – I found the title – academic lawyer interesting, I guess that means you plant to stay in an university capacity?

  1. Hello my dear, thank you very much for your comments as always. Yes the poem is fun isn’t it, reminds us to enjoy ourselves! I didn’t spend enough time at Angies, but luckily her part is ongoing until Wednesday so will check back in. Valentines day being a Friday was great, even without the scallops. Happy weekend to you!
