Simple vegetarian lunch for one – 5-10 minutes max

Another non recipe recipe  – but you don’t need one really – you need flour, eggs,some baking powder ( if you like) some milk or water and sea- salt  – using these ingredients mix a pancake batter. Filling – whatever you have handy, goats- cheese, fresh basil, cherry tomatoes, chopped red peppers etc. Heat a non stick skillet, pour the batter into the pan bake until brown on one side – cover if top is not cooking fast enough, load as much filling as will fit onto the pancake, flip over half and cook a bit more, serve with rest of filling on the side and sprinkle lots of hot smoky turkish paprika.
